Canola oil is good for your heart and to use in the kitchen for cooking but have you ever wondered if it's good to bake with?

One of the healthiest for your heart and most versatile cooking oil in use today, Canola oil is used widely by both home cooks and professional chefs alike. It's light, clear and has a mild taste, which makes it ideal for cooking, fondues, stir-frying, salads and marinades. And, yes, even baking!

This oil can replace the other types of unhealthy fats or oils you've used previously in baking to help lower the saturated and trans fat content of your favorite recipes. Besides using it in the recipe itself, use it to generously grease your cake pans and cookie sheets so you've eliminated even more fats from your diet. Every little bit you can change in the kitchen will count toward your better overall health.

When using Canola oil as a substitution for shortenings or margarines, replace it in the following measurements:

Now get ready for some delicious recipes using Canola oil for baking:

BEST BROWNIES EVER

1/3 Cup Canola Oil

1 Cup White Sugar

2 Eggs

1/2 tsp. Vanilla

1 Cup Flour

1/2 tsp. Salt

3 Tbsp. Cocoa

1/2 Cup Chopped Walnuts or Pecans

Beat Canola oil and sugar together until light and fluffy. Mix in eggs one at a time, add vanilla. Slowly add flour, salt, cocoa and nuts. Beat until thoroughly mixed together.

Grease 8x8 inch pan with Canola oil (spray is OK). Spread mixture in pan and bake at 325° for 20 minutes. Test several places in middle of pan with cake tester for doneness.

Cool in pan and then cut into squares. Frost if you would like.

COCONUT-DATE MACAROONS

3/4 tsp. Canola Oil

1 Cup White Sugar

1 Egg

1 1/2 Cups Finely Chopped Dates

1 tsp. Vanilla

2 Cups Rice Krispies Cereal

1 Cup Coconut

Beat egg and sugar in medium size pot. Add chopped dates. Over low heat, cook-stirring constantly until dates are softened and stringy. About 15 minutes.

Cool 5 minutes. Stir in oil, vanilla and cereal. Mix very well.

Roll into a walnut size ball and then roll in coconut. Place on waxed paper.

Transfer to containers when completely cool. These may be frozen for later use.

COLD OVEN POUND CAKE

1/2 lb. Butter

1/2 Cup Canola Oil

3 Cups White Sugar

5 Large Eggs

1 tsp. Vanilla

3 Cups All-Purpose Flour

1/2 tsp. Baking Powder

1/4 tsp. Salt

1 Cup Milk

With mixer, beat butter until well creamed. Scrap down the sides of the bowl and slowly add the oil and sugar, alternately, while beating well. Add eggs one at t time, beating well after each addition. Add vanilla.

Mix dry ingredients together in a separate bowl. Add them alternately with the milk to the butter mixture. Beat well.

Pour into a well greased and floured tube pan. Put cake in a COLD oven, and THEN turn on oven to 350°. Bake for about 60 to 75 minutes or until tester comes out clean. Cool for 10 minutes and then turn upside on wire rack to finish cooling. Cake should slide out of pan as it cools.

Serve with berries or ice cream or frost with a drizzling of powdered sugar frosting in the flavor of your choice.

WHEAT AND POTATO CORN BREAD

1 Pkg Active Dry Yeast

1 Tbs. Sugar

2 Cups Warm Potato Water, Divided

1/4 Cup Canola Oil

1 Tbs. Salt

3/4 Cup Mashed Potatoes-no butter, milk or seasonings

2 1/2 Cups All-Purpose Flour

3 Cups Whole-Wheat Flour

1 Cup Yellow Cornmeal

Mix the yeast and sugar well with 1/2 Cup warm potato water and let set for 10 minutes.

In a large mixing bowl, combine the oil, salt and the remaining potato water. Add the mashed potatoes, stir in the yeast/sugar/water mixture and beat well.

In a separate bowl, combine the flours and cornmeal, stir.

Add the flours gradually to the wet ingredients to make stiff dough. Turn out on a floured board and knead until the dough is no longer sticky-about 10 minutes.

Place in a well-greased glass bowl and turn over in bowl to coat the top. Cover with a clean dishtowel and allow to rise in a draft free place until doubled-about 2 hours.

Punch down the dough and knead another 3 minutes. Cover and allow to rise again for about 30 minutes.

Place on a well-floured board and divide into 2 parts. Leave the dough on the board, cover the dough and let it rest for 15 minutes.

Pre-heat oven to 400°.

Place into 2 well-greased loaf pans. Cover and allow to rise in a warm, draft-free place until the dough appears just above the top of the pans-about 1 hour. Dust the loaves lightly with flour.

Bake at 400° for 20 minutes, then reduce the heat to 350° and bake for another 20 to 30 minutes OR until brown and hollow sounding when tapped with your knuckle or a butter knife handle.

Immediately turn out of the pans onto a clean cloth and then transfer to a wire rack to cool.

M-I-C....K-E-Y.... M-O-U-S-E! Who doesn't love that famous mouse and all of his friends??? Here are some great ideas for a fun Mickey Mouse party! Mickey Mouse Clubhouse is all about solving puzzles that are essential to accomplishing the day's goal, so throw your child a birthday party where she and her friends can get swept up in the fun and excitement of learning new things while getting things done.

Invitations: Print theme coloring pages off the Disney Mickey's Clubhouse official website. They are really cute and there is a bunch to choose from. On a separate piece of brightly coloured red, blue or yellow paper, write or print out the party details - the who, when and where. "Mickey and his friends are having a Birthday Party and want you to join the gang!" would be the perfect wording for the Invite. You can even cut the invitation paper in the shape of Mickey's Head and Ears. For added flair you could throw in a few crayons or even a small box of 8. Request that each guests colour in their picture for display at the party. Place both papers into an envelop, seal with Mickey sticker and deliver. This idea works especially well for a toddler party

Decorations: For Mickey Mouse party decorations use lots of red, yellow and blue streamers and balloons. Have bunches of helium filled balloons as well as plenty of air filled balloons floating around the party floor. Cut out a large Mickey's head shape out of black poster board with a very large sign that says "Welcome to Mickey Mouse Clubhouse!" and and stuffed animals around the scene. Put up posters of Mickey and friends on the wall. Have a designated spot for the guests to display their art work that was sent with the invitation! Using red, yellow and blue construction paper, cut out several different shapes like circles, squares, squiggles and triangles. Hang the shapes with fishing wire from the ceiling all around the party area or above the party table. Use different lengths of wire so it looks really neat! You can even do the same with numbers! Cut out numbers from 1-9 and place all around the walls. Mickey is all about learning!

Crafts: Make your own Mickey Ears. Purchase some black Headbands and black foam craft paper. Before the party pre-cut the Ear shapes so all you have to do with the little ones is glue on the ears! Hot glue the ears on so the guests can wear them right away. You could even pre-make them and just present them to the guests as they arrive. Have some pink bows for the little Minnie's attending! Make your own Mouskespotter - A mousekespotter helps Mickey find things he needs so when you are done you could play a little game of "Eye Spy" of items around the party area. All you need is paper towel cardboard tubes and things to decorate with such as markers, yarn, crayons, stickers, foamies and glitter. Lay out the decorating materials on the designated craft table and give each child a cardboard tube. Ask the children to create and decorate their own mousekespotter!

Games: I Spot...Play Mickey's favorite game using shapes, numbers and colors. Before the party, make several large, coloured paper shapes or numbers. You could even use the ones you have already created and hung for decoration around the party area! Then, make sure you have a duplicate of each shape you cut. When it's time to play you hold up a shape, a purple flower for instance and say " I spot a purple flower...do you?" The kids will run to the image that matches the one you are holding or identify the shape by remaining seated and using their newly crafted Mouskespotter. You can play this several times, getting slightly more challenging as you go. Musical Chairs - With a twist of course! Instead of chairs use a flat floor space. Use a variety of large shapes of various colours and tape them very securely to the floor in a circle. At game time, have the guests walk around the outside of the circle and when the music stops, they must quickly and carefully sit down on one of the shapes. Each round, remove one of the shapes or place a Disney stuffed toy on the place to let the kids know that seat is already taken! It would be best to have more shape seats than kids at first so they can all play for a bit before being eliminated. Set up for round 2!

Menu: What is Mickeys favourite song? The "Hot Dog Song" of course! What a perfect food to serve for meal time! If your little one is not a fan of hot dogs, try serving up Mickey Mouse shaped pancakes and syrup just like they do at Disney World. Since Mice love cheese, have an array of cubed cheeses and crackers for the little Mickey and Minnie Mice to munch on before lunch! Another option is to serve "Mic-Aroni" and cheese. You can even buy macaroni in the shape of Mickey's head! Bake your very own Mickey Mouse Cake. Bake one 9" round cake and two 6" round cakes. Position the cakes so the bigger cake is the face, and two smaller cakes are the ears of Mickey. Frost the face with white frosting. Frost the Ears with chocolate icing. Pipe on your Happy Birthday Wish, some candles and a small Mickey Figurine. Voila! A Mickey Mouse masterpiece!

There's no better way to cap off a hearty Filipino meal than with something light and sweet for dessert. No, not ice cream or milkshakes, although those are great too-we're talking about native Filipino desserts. If you think sweets have no place in Filipino cuisine, you can't be further from the truth. From simple sugar-raised doughnuts to elaborate cakes, there's always a sweet Filipino food that's sure to satisfy that sweet tooth.

But one dessert that deserves a mention is the Filipino pastry. Although not as popular as our kakanin or rice cakes, Filipino pastries are a steady favorite in many regions. They're also a great start if you want to bake your own Filipino desserts recipes. They don't require as much attention as kakanin, but they give you just the same sweetness. Here are some of the most popular pastries in Filipino cuisine, plus some recipes to help you get started.

Buko Pie

It's hardly surprising that one of our favorite desserts comes from our top fruit export. Outside the country, buko pie is sold in pre-packed frozen slices, so we're lucky to get it here fresh and hot, not to mention cheap. It is a popular pasalubong for people who go south of Luzon, particularly to Laguna, Quezon, and Batangas. The filling is made from young coconut flesh mixed with macapuno, coconut milk, cream, and sometimes caramel. Most bakeries carry a cheaper version of the pie made from sweetened coconut juice and flour. If you feel like making your own, here's an easy recipe you can try.

Buko Pie

Ingredients:

2 c all-purpose flour

2/3 c shortening

1 egg yolk

¼ c cold water

1 tsp salt

1 tsp vinegar

4 c shredded coconut meat

300ml condensed milk

2/3 c cornstarch

1 c coconut water

Procedure: Preheat your oven to about 435oF. In a bowl, combine the salt and flour and cut in the shortening until they form pea-sized pieces. In a separate bowl, mix the egg yolk, water and vinegar, then add to the flour mixture. Mix until the dough is soft and pliable. Split the dough into two balls, one part a bit bigger. Roll out the bigger dough until it's slightly bigger than your pie plate. Fit into the plate and let hang over the sides. Roll out the smaller dough, then set aside.
In a saucepan, combine the remaining ingredients and cook until thick. Let it cook for about 15 minutes, then pour into the crust. Cover with the smaller dough, seal the edges, and bake for about one hour.

Boat tarts

For a quick, cheap sugar fix, boat tarts are your best option. These are small, open pastries with a filling of caramel, ­langka (jackfruit), mango, or some other sweetened fruit. You can find them pre-packed in most groceries and cafeterias. They are a popular dessert for school lunches, mainly because they are fairly cheap and go well with most Filipino food recipes. If you can pull off a simple cake, boat tarts shouldn't be a problem.

Pili Nut Tarts

Ingredients:

1 kg all-purpose flour

½ kg ground pili nuts

1 cup butter

1 cup sugar

1 cup condensed milk

1 cup ice water

Procedure: Mix the flour and sugar, and cut in the butter until they form small pea-sized balls. Slowly add in the water, stirring along the sides to help the dough hold together. Form the dough into small balls, then roll out about 1/8 inch thick. Press into tart molds and prick the sides and base with a fork. Bake the dough for about 20 minutes. Meanwhile, mix the condensed milk, sugar, and ground nuts. Pour into the baked crusts and top with pili slices. Return to the oven and bake until the filling turns golden brown.

Macaroons

Filipino macaroons are made with coconut shavings, which make them chewier than flour-based American ones. It's actually one of the easiest Filipino cooking recipes, so it's a great starter recipe for beginners. This one puts an unusual twist on the basic recipe.

Pandan Macaroons

Ingredients :

1 cup desiccated coconut

½ cup coconut cream powder

1 tsp pandan extract

¼ cup melted butter

1 ¼ cup sugar

¼ cup bread crumbs

3 eggs, separated

1 ¼ cup warm water

green food color

salt to taste

Procedure: Preheat your oven to 320oF. Grease a baking pan with butter and sprinkle a little flour to coat. In a bowl, mix the water and coconut cream powder, then set aside. Beat egg whites until they get foamy, then beat in the yolks. Combine the bread crumbs, desiccated coconut, sugar, salt, and butter. Add in the egg mixture, dissolved coconut cream, food color, and pandan extract. Mix well and pour into the pan. Spread evenly and shake down to compact the batter. Bake for about 20 minutes or until the sides are browned.
